Dilly Baby Potatoes

Well we did it! Dan and I successfully had my Aunt, Uncle and their two kids over for supper with nothing bad happening and supper turned out to be wonderful! I left work an hour early to come home and clean up, finish supper, shovel the sidewalk, etc. I’m glad I did though, supper was ready pretty much just on time. The ham was simple just put in a bit of water and pepper, baked it at 325F for 2 1/2 hours… but then there was these… these new baby potatoes that I found in the store..

 

Dilly Baby Potatoes

1 lb baby potatoes
1/2 cup (1 stick) butter
1 1/2 – 2 tbsp dried dill

Boil the potatoes for about 15 minutes or until done. Meanwhile in a small pot, melt the butter on low heat so it doesn’t burn. Add the dill and cook while stirring for 5 minutes. Pour over the potatoes to coat. Serve immediately.

I didn’t use all the butter/dill sauce.. but these potatoes were to die for! They pop in your mouth when you bite into them and then they just melt. My Aunt and I were putting away dishes and we couldn’t stop eating them!

The pie turned out great.. soo good with vanilla ice cream… thanks Dan!

So yes, I think it was a very successful supper. I didn’t even realize that my two cousins love ham.. hmm.. its a good thing thats what I made!

I just have such a hard time with my Aunt, because of the way she brought up her kids, they are very spoiled. And they are terrified of dogs, which is weird because they used to have a huge dog that loved to  lick and bark.. and if their mom didn’t encourage them to be scared of the dog I’m sure they would be fine… Kato is after all just a puppy.

Sweet Potato Fries

I took the weekend off of pretty much everything and did nothing but relax and get some much needed sleep.

We had a suprise birthday for one of our friends on Saturday, and I probably drank just a bit too much, resulting in both Dan and I sleeping until 2 the next afternoon. Sunday was Valentine’s Day, and we didn’t really do anything, just ordered chinese food and watched the olympics and movies all night.

And yesterday, we did absolutely nothing, made breakfast, laid around and ended up falling asleep again.. it was perfect.

Last night for supper I wanted to try something a little bit different. These sweet potato fries were soooo amazing. Not really crunchy though, but they held their shape.

 

Sweet Potato Fries

1 sweet potato
1/2 tbsp olive oil
cajun seasoning
fresh salt and pepper

Preheat oven to 425F.

Slice the potato into 1/2 inch thick strips. Toss with oil, salt, pepper, and cajun. Place on a non-stick baking sheet and bake for 15 minutes. Turn potatoes and bake until bottom is browned, about 10-15 more minutes. Serve immediately.

I might try and experiment with these a bit more and see if I can get them a little more crunchy.. but I’m afraid that the only way to do that would be to deep fry them and I’m really not interested in doing that at all.

home sick

Yesterday I was home sick for the day. I woke up with a pounding headache and upset stomach. I still have it.. but its friday and I know I’ll have stuff to do today if I don’t go. And.. my new laptop came in already so I have to get it from work anyway.  I’m pretty excited to have it. I can’t wait to be able to do all my graphic design stuff again, and I know I’ve said it before. I wasn’t expecting the laptop to come in for a couple days yet.

Last night Dan finally came home, he’s been gone since sunday. So I thought I would suprise him, even though I wasn’t feeling good.. I made fried fish, rice and potato salad.. I knew he wouldn’t eat the potato salad but I thought hey why not.. I love potato salad and I had found a new recipe that I was dying to try and its only 100 calories! Its from my new cookbook!

Creamy Potato Salad

4 medium potatoes
1 cup sliced celery (2 stalks)
1/4 cup thinly sliced green onions
1/2 cup low fat mayonnaise dressing
1/2 cup light dairy sour cream
2 tbsp fat free milk
2 tsp prepared mustard
1/4 tsp dried dill
1/4 tsp salt

Scrub potatoes. In a large covered saucepan cook poatoes in boiling water for 20 to 25 mins or until tender.  Drain well and cool slightly. Cube potatoes ( I left the skins on). Transfer to a large bowl. Stir in celery and green onions.

In a small bowl stir together the mayonnaise dressing, sour cream, milk, mustard, dill and salt.  Pour over potatoes. Carefully fold in the chopped egg.

Cover and chill for 4 to 24 hours.

Its pretty easy to make, and I actually served it when the potatoes were still warm. It was so good. I always get this hot potato salad when we go to Earl’s restaurant in the city and it really reminded me of that. Anyway.. I am definitely taking left overs for lunch today! The only thing that bothers me about the new cook book is it doesn’t say how big your portions should be it just said this makes 8 servings. Oh well.. I guess I’ll just have to eye ball everything.
