Buffalo Chicken Pizza

As I sit down this morning with my warm cup of coffee I realize, I’m in my happy place. You may have noticed every now and then I get down on myself, and depressed. Sometimes its a real fight with myself to make myself even feel like getting out of bed. But, over the past couple weeks I have been taking Cipralex, a new drug for depression.

I have noticed a huge difference in all my day-to-day things. Everything from the amount of energy I have in the mornings, to wanting to do things again, like scrapbooks and cooking! YAY! Even my BF has noticed. I let him go out to the casino with the guys last night! What is wrong with me I keep asking myself! Three months ago I never would have agreed to such a thing, since I absolutely hate gambling and see no point in wasting money that we work so hard to save up.

So as things are getting better for me and I can find my happy places easier and just feel at ease with life, I have decided I need to start-up my blogging again. After a couple of month break its time to come back to it. So, with that. Here is my newest recipe:

 

Buffalo Chicken Pizza
3 boneless skinless chicken breasts – cooked and cubed
1/4 cup ranch dressing
2 tbsp butter
1 cup hot sauce
1 prepared pizza crust
1 (8 ounce) package shredded mozzarella cheese

Preheat oven to 450F. Prebake the crust for just a few minutes.

In a medium bowl combine chicken, butter and hot sauce. Mix well. Spread the ranch dressing over the pizza crust. Top with chicken and spread the cheese overtop.

Bake in preheated oven until cheese is golden brown and bubbly. About 5-10 minutes. Let sit for a few minutes before serving!

Its just one bad thing after another these days and I just can’ t seem to catch a break.

Dan’s grandpa called and wants his mail delivered.. well I’ve been so busy at work and at noon I either go to the gym or go skating I’m not sure when I’m going to be able to take it. Dan’s home tomorrow (thank god) so maybe he can take it to his grandpa when he picks up kato. Then maybe if he sneaks Kato in to see papa he would feel better. He is getting out this saturday but I think he is heading to the city with some other relatives. Its good to hear because we didn’t think he would make it out. He is sure one tough old bird!

Then when I got hom Ryley informed me that our fridge in the garage has frozen, and all the glass bottles of beer have shattered.. good to know.. so I started cleaning that up too. But gave up when I realized I really have no where to put the bottles and stuff so they can thaw out.

And then there is a cougar in town.. no not an old lady looking for young boys to prey on. A big cat.. and my poor puppy is no longer going outside as much as he used to and I hope to god Dan doesn’t put him outside and forget him for an hour like he usually does. I’ll be so mad if I come home one day and Kato is gone.. all because he was left outside too long and the cougar got him!

Anyway one good thing that happened in my kitchen is this recipe.. These Pizza-Pull-Aparts were so easy to make and so good. We had dipped them in Ranch dressing and extra Pizza sauce. So good!

 

Pizza-pull-aparts

½ batch pizza dough (enough for 1 pizza)
1/4 cup pizza sauce
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni

For topping:
Olive oil
Italian seasoning
Grated Parmesan cheese

Preheat the oven to 400˚ F.  Lightly grease a 9-inch pie plate or cake pan.  Divide the pizza dough into 20-24 roughly equal sized pieces.  Take one of the dough pieces, brush with pizza sauch, top with a cube of cheese and a slice or two of pepperoni.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.

Lightly brush the tops of the dough balls with olive oil.  Sprinkle with Italian seasoning and grated Parmesan cheese.  Bake for 20 minutes, or until the tops are golden brown.  Serve warm, with dipping sauce as desired.
