Egg nog in January?

So I know Christmas is over, but eggnog is one of my favorite things to have in the morning with my coffee in winter. Those eggnog latte’s from Starbucks used to be one of my favorite things to have but since I no longer live in the city and there isn’t a starbucks for miles I have to improvise!

Skinny Eggnog

3 cups 1% milk
1 vanilla bean
2 large eggs
1/3 cup sugar
1 tsp cornstarch
Freshly grated nutmeg, for garnish

Heat 2-1/2 cups milk in a medium saucepan. Split the vanilla bean lengthwise and scrape out the seeds; add the seeds and pod to the saucepan and simmer over medium heat.

In a large bowl, whisk the eggs, sugar and cornstarch until it turns light yellow.

Temper the eggs by gradually pouring the hot milk mixture, about 1 cup at a time, into the egg mixture, whisking constantly (this is important, otherwise you’ll make scrambled eggs). Pour the mixture back into the pan. Place over medium heat and stir constantly with a wooden spoon until the eggnog begins to thicken, about 6-7 minutes. Remove from the heat and immediately stir in the remaining 1/2 cup milk to stop the cooking. Remove the vanilla pod, let it cool and transfer to a pitcher, chill until ready to serve.

Its pretty simple to make so I can always have it on hand. Not sure how long it lasts for is the only thing.. I don’t imagine too much longer than a week or so. But its just comforting to have and since its been so cold the past couple days after our big storm is the perfect thing to warm up a person on a cold morning.

yum! Pumpkin Spice Coffee!!!

So, definitely got lots done cooking/baking wise yesterday. Other then that I didn’t do too much. I spent an hour looking for rice wine vinegar in the nearest bigger town. Rented some movies. Watered grass.. thats about it.

This morning I’m trying out my pumpkin syrup for coffee. Its absolutely yummy! Reminds me of starbucks! All it is, is a simple syrup with nutmeg, cinnamon, cloves and ginger in it! Boil everything for 10 mins and store it. Then I made my coffee this morning added some whipping cream and a splash of the pumpkin spice and presto! A pumpkin spice coffee!

I mean face it… its almost fall now right? The leaves are changing colors and starting to fall.. everybody is starting harvest. So why not go with the pumpkin spice thing and make ginger cookies? Ginger Cookies are my favorite fall/christmas cookie. I couldn’t find a recipe small enough though, because I only wanted like 30 cookies, so I came up with kinda my own recipe by joining two together. But isn’t that what baking is all about? Expirementing and what not?

So the recipe I came up with goes like this:

Ginger Sugar Cookies


2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp ginger
1/2 tsp cinnamon
1/4 tsp cloves
3/4 cup butter
1 cup sugar
1/4 cup molasses
1 egg

Cream butter, sugar, egg and molasses together. Mix dry ingredients in a seperate bowl. Slowly mix together the dry ingredients with the wet until they are mixed well. Roll into balls and dip into sugar. Place on cookie sheet and bake for 8 minutes at 350F.

Thats it. They turned out super yummy.. and although I like mine burnt a bit around the edges these came out so soft and gooey I love them!

Today for lunch I’m going to try and master Kung Pow Chicken. Its one of Dan’s favorite meals… If I get the energy and motivation. Its supposed to be soooo nice today I may just have to sit in the sun with my book.
