Chunky Barley Soup

Well, yersterday was skating day at lunch again! I did great, I asked my bosses’ wife who goes there at noon to teach her figure skater to teach me how to skate backwards using crossovers.. so that will be thursday’s project. Its been really cold out lately and the rink wasn’t very warm yesterday so I’m sure glad that I brought this soup to warm me up when we got back! It kept me full all afternoon too!

 

Chunky Vegetable and Barley Soup
1 (796ml, 28 fl. oz) can whole peeled tomatoes with juices, chopped
3 cups of water
1/4 cup of cilantro, finely chopped
1/4 cup of curly parsley, finely chopped
2 carrots, chopped
2 celery stalks, chopped
1 can red kidney beans, drained and rinsed
1 can corn kernels, drained and rinsed
1/2 cup of barley
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1/2 tsp of turmeric
salt and pepper to taste
extra virgin olive oil

On high heat, heat a large pot with some extra virgin olive oil, and sautee the onion, garlic, and turmeric until the onions are translucent.

Turn heat down to medium. Add the tomatoes, water, cilantro, parsley, and cook for 10 minutes. Add salt and pepper to taste.

Turn the heat down to simmer. Add celery and carrots and cook for 20 minutes with the lid on.

Add the barley, corn and kidney beans, and cook for 30 minutes with the lid on, stirring occasionally. Add more salt and pepper if required.

 If you prefer a more watery soup, use less barley.

another night alone

well.. my hockey billet ended up being gone last night to an away hockey game so I had the night to myself… and the dilemma began.. what to make myself for supper?

I thought I would just browse through that new cookbook I picked up and I found  a recipe for roasted vegetables.

Roasted Vegetables
1 tbsp olive oil
2 tsp soya sauce
2 cloves garlic
1 tsp fresh ginger
2 large carrots chopped
4 medium potatoes chopped
1 small onion chopped
fresh ground black pepper

Mix the olive oil, soya sauce, garlic and ginger in a bowl, add the chopped vegetables and mix until evenly coated. Pour into a baking dish and bake for 45 mins uncovered in a 425F oven. Stir once or twice.

Thats it so simple. Except I forgot about mine in the oven and burnt it around the edges and cooked  it all a bit too long. But it was still good. I ate it anyway..

What else did I do yesterday… nothing really played wii fit. I love my wii fit. I usually do a couple mini games and then I go into my personal trainer part and do the exercises for my hips and belly. I have been trying to stay up until 10 or so. I find I have a better sleep and don’t wake up as much during the night if I go to bed later.. the problem is just finding something to do to keep myself occupied. And there is absolutely nothing on tv these days.

I could have taken my tree down last night, but I think it looks so pretty up still I didn’t have the heart to take it down yet. Maybe this weekend I’ll take it down and get Dan to take the tree to his parents farm to throw it out. Dan comes back from the hockey games today. I guess Canada lost, I didn’t watch the game and I had to desire to either. I am so sick of hockey I can’t wait for it to be over!
