Buffalo Chicken Pizza

As I sit down this morning with my warm cup of coffee I realize, I’m in my happy place. You may have noticed every now and then I get down on myself, and depressed. Sometimes its a real fight with myself to make myself even feel like getting out of bed. But, over the past couple weeks I have been taking Cipralex, a new drug for depression.

I have noticed a huge difference in all my day-to-day things. Everything from the amount of energy I have in the mornings, to wanting to do things again, like scrapbooks and cooking! YAY! Even my BF has noticed. I let him go out to the casino with the guys last night! What is wrong with me I keep asking myself! Three months ago I never would have agreed to such a thing, since I absolutely hate gambling and see no point in wasting money that we work so hard to save up.

So as things are getting better for me and I can find my happy places easier and just feel at ease with life, I have decided I need to start-up my blogging again. After a couple of month break its time to come back to it. So, with that. Here is my newest recipe:

 

Buffalo Chicken Pizza
3 boneless skinless chicken breasts – cooked and cubed
1/4 cup ranch dressing
2 tbsp butter
1 cup hot sauce
1 prepared pizza crust
1 (8 ounce) package shredded mozzarella cheese

Preheat oven to 450F. Prebake the crust for just a few minutes.

In a medium bowl combine chicken, butter and hot sauce. Mix well. Spread the ranch dressing over the pizza crust. Top with chicken and spread the cheese overtop.

Bake in preheated oven until cheese is golden brown and bubbly. About 5-10 minutes. Let sit for a few minutes before serving!

Buffalo Chicken Wings

Yesterday was a packed full day of sitting around and watching sports.. all olympics and mostly hockey. Let me tell you how excited I was to find out that all I got to do yesterday was watch hockey.. I had wished that I left laundry and cleaning for yesterday. So I thought I might as well skip out on the steak and potatoes for supper and make something manly… wings, fries and veggies.. yum!

Buffalo Chicken Wings

20 chicken wings, split and tips discarded
1/2 cup butter, melted
1/2 cup red pepper sauce
1/2 cup ranch dressing
1 1/2 tablespoons chili powder
1 teaspoon cayenne pepper

Preheat oven to 375F. Bake wings in preheated oven for 30 minutes, or until cooked through and crispy.

Meanwhile, in a small bowl combine melted butter, red pepper sauce, ranch dressing, chili powder and cayenne pepper. Mix together.

When wings are baked, dip in sauce to coat well, then shake off excess and return coated wings to baking sheet. Reduce oven temperature to 250F and bake for another 15 minutes to set sauce.
