Creamy Lemon Chicken Soup

I woke up this morning to the outside door banging up against the house. Its storming, and cold, and snowing.

I’m so glad I have some of this soup frozen for my lunches!

Creamy Lemon Chicken Soup
5 cups chicken broth
5 cups water
5 tsp chicken bouillen powder
3 medium carrots, chopped
1 large onion, chopped
4 cups cubed cooked chicken
1 cup uncooked long grain rice
3 eggs
1/3 cup lemon juice
1 1/2 tsp oregano

Combine first 5 ingredients and boil. Add chickena nd rice. Reduce heat, cover and simmer for 15 minutes. Whisk together eggs and lemon juice. Add slowly to soup. Seasonw ith oregano and pepper. Enjoy!

I didn’t put the eggs in the soup because I was freezing it, but it ended up being super thick anyway. So I’m not too worried. My boyfriends mom said to leave out some of the lemon but I didn’t think it was too bad.. I mean thats the way lemon soup is supposed to be..

Chunky Barley Soup

Well, yersterday was skating day at lunch again! I did great, I asked my bosses’ wife who goes there at noon to teach her figure skater to teach me how to skate backwards using crossovers.. so that will be thursday’s project. Its been really cold out lately and the rink wasn’t very warm yesterday so I’m sure glad that I brought this soup to warm me up when we got back! It kept me full all afternoon too!


Chunky Vegetable and Barley Soup
1 (796ml, 28 fl. oz) can whole peeled tomatoes with juices, chopped
3 cups of water
1/4 cup of cilantro, finely chopped
1/4 cup of curly parsley, finely chopped
2 carrots, chopped
2 celery stalks, chopped
1 can red kidney beans, drained and rinsed
1 can corn kernels, drained and rinsed
1/2 cup of barley
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1/2 tsp of turmeric
salt and pepper to taste
extra virgin olive oil

On high heat, heat a large pot with some extra virgin olive oil, and sautee the onion, garlic, and turmeric until the onions are translucent.

Turn heat down to medium. Add the tomatoes, water, cilantro, parsley, and cook for 10 minutes. Add salt and pepper to taste.

Turn the heat down to simmer. Add celery and carrots and cook for 20 minutes with the lid on.

Add the barley, corn and kidney beans, and cook for 30 minutes with the lid on, stirring occasionally. Add more salt and pepper if required.

 If you prefer a more watery soup, use less barley.

Long weekend suprises!

Wow I haven’t wrote for a week!

We left Friday morning for the lake with Dan’s cousins. It was definitely an interesting week with them. Dan and I were both at the end of our nerves! His cousins have such an attitude, like no body’s business. They don’t have any respect for other people or money.. and at the end of it all I had learned that they stole my ipod cord cause they “lost” theirs.. actually they left it at the lake. But whatever, we did actually have a good weekend. We went to Edmonton for a day, did some shopping… I got some pretty good deals on clothes, youth larges fit about the same as adult medium, and they are longer in length too! Bought a coffee table we ended up using as a tv stand with baskets.. It looks absolutely beautiful. I’ll get pictures up soon!

Other than that, we just laid around and left for home monday morning.. thats where the best impulse suprise buy comes in. I talked Dan into stopping at the pet store just to look.. well we looked alright, and found the cutest little most expensive puppy in the store! A $1500 (kennel, food, toys all included) pure breed pekingese pup! Ladies and gentlemen I would like to introduce you to our puppy…

I haven’t really done any cooking lately, just warming up leftovers and stuff…  I did make Banana Bread though, oh and I guess my mom’s hamburger chowder.. The hamburger chowder has been a family favorite since my brother played hockey and someone brought it to the tournament. In turn, I showed the recipe to Dan’s mom, and it is now also her familie favorite. Its just soooo good!

cheeseburger chowder

Cheese Burger Chowder:

3 large potatoes peeled and cubed
4 large carrots chopped
3 celery stalks chopped
1/2 large onion chopped
1/2 lb hamburger
3 tbsp cheese whiz
2 tbsp chicken 0x0
2 cups milk
cornstarch and water to thicken

Add vegetables in pot and cover with enough water to boil. Meanwhile brown hamburger (I made tacos the night before and I just saved half the hamburger). Once vegetables are done add everything else and add enough cornstarch water mix to thicken.

Super easy hey! And ohhhh so good!
