Kapusniak (Ukrainian Sauerkraut Soup)

Every now and then I get a craving for sauerkraut. My HTB (Hubby to be)’s mom made this soup from the Ukrainian cook book we both have so I had to try it! I cut the amount of sauekraut in half to make it more “soupy”.

 

Kupasniak
1-2 lb pork hocks
1/2 qt sauerkraut
2 cups chopped potatoes
1 cup thinly cut carrots
1 onion
1 bay leaf

Boil pork hocks for an hour in just enough water to cover. Add the sauerkraut, potatoes, carrots, onion and bay leaf. Continue to boil for an hour or until all vegetables are cooked.

Dan’s gone to coach in his hockey tournament this weekend. We cleaned up last night after supper so I made bread this morning and some Italian Wedding Soup. Its just so relaxing to have a day to yourself and not worry about what time your eating and have to have supper ready at or lunch or anything done for that matter…

Dan is also gone all next week so I can cook “real food” again.. food that has vegetables in it! YUM! I can honestly say that I’m getting over his being gone all the time and I enjoy the nights to myself because Ryley has hockey practice every night. I can play my wii fit and just relax and watch what I want to watch. We rented movies last night and I started to watch Cloudy with a Chance of Meatballs. I didn’t really care for it honestly… I think Up has been my favorite cartoon movie recently. I really enjoyed that one and cried a couple times. I think I might have to put a movie in later and relax… sounds like a good time..

Anyway before I get to relaxed here is my recipe for today:

Italian Wedding Soup

2 tbsp olive oil
2 carrots, peeled and chopped
2 ribs celery
1 medium onion
2 bay leaves
salt and pepper to taste
1 lb ground beef
1 lb ground pork
1 egg beaten
2 cloves garlic
1/2 cup grated parmesan cheese
1/2 cup plain bread crumbs finely ground
1/2 tsp nutmeg
6 cups chicken stock
 2 cups water
1 1/2 cups dried pasta (I used about 1 cup cooked left over rice instead)
1 lb triple washed spinach coarsely chopped

In a deep pot over medium heat, add oil, carrots, onion, celery and bay leaves. Season mixture with salt and pepper. Cover pot and cook vegetables for 5-6 minutes, stirring occasionally.

While vegetables cook, combine ground meats, egg, garlic, grated cheese, breadcrumbs, salt, pepper and nutmeg.

Add broth and water to the pot of vegetables . Increase heat to high and bring soup to a boil. Reduce heat. Start to roll tiny meatballs and drop into soup. Add pasta and gently stir.  Cover and simmer for 10 minutes. When pasta is tender add spinach in batches.

The soup is ready when the spinach is wilted. Adjust seasoning to taste.

Its so simple I’m not sure why I haven’t made it more often.. the only part that is tedious is the meatball making.. i’m thinking you could make a huge batch and freeze them maybe? It would make it easier..

pork cutlets. yum!

So I wasn’t expecting to come home for supper last night, I really didn’t want to be around our hockey billet. I just don’t feel comfortable with him here and don’t really want to have anything to do with him. So when I decided last minute that it was too cold to go work out and I should probably go home and cook for the hockey billet I realized I had nothing out. Straight to my freezer I went to see what kind of goodies lay hidden in the cold cold treasure box.

Pork Cutlets.. yup.. My dad’s speacilty.

Pork Cutlets
1 cup flour
2 tbsp seasoning salt
1 tsp garlic
dash salt
dash pepper
onion slices

Heat a pan over medium heat and add veg. oil, about enough to cover the bottom of the pan. Mix together flour, seasoning salt and garlic. Dip pork cutlets in mixture and fry until golden brown on both sides, flipping once. Place in a roaster with just enough water to cover the bottom. Add onion slices and salt and pepper and bake at 350 for about 30mins.

My dad isn’t a good cook by any means, but sometimes he can pull it off. This recipe took me 40 mins to make and we were done eating by 7:30. So not to to bad.  I honestly can’t wait until he is gone, then back to my routine, which is not really having a routine and eating later at night when supper is ready.. not rushing home to make it or have Dan make it. I miss cooking..
