Bacon Wrapped Scallop Skewers

Well that was such a fun weekend. We had two of Dan’s friends from college come stay with us, a hockey game, and a men’s curling bonspiel. Friday night I talked to Janelle, and she filled me on this town. We talked about who is stuck up and belongs to a clique and what there actually is to do. I can’t stand people who are cliquey. It makes it so hard to feel like I belong in this small town when everyone already belongs to a group and won’t even give you two cents..

Dan’s friends were a good time.  Steve-o was the one that got dumped as soon as they got back from Mexico. He was kinda blah.. but Bender is just absolutely hilarious. He has this giggle and once he starts laughing everyone is usually laughing with him. The hockey game was a huge win for us, and after we walked over to the curling rink to watch some of the men’s bonspiel. We came home pretty early and ended up playing video games until early in the morning. I actually slept in until ten yesterday too. I was suprised. I usually don’t sleep past 8 in the morning…

We had made a huge steak and scallop and shrimp supper.. I don’t usually care for seafood that much but these scallops were amazing!

Marinated and Grilled Bacon-Wrapped Scallops

4 tsp. chopped cilantro
2 cloves garlic, grated
1 Tbsp. lime juice
1/4 cup Thai sweet chili sauce
1/2 tsp. California hot sauce (or hot sauce of your choice)
1 Tbsp. canola or olive oil
1/2 lb. sea scallops
1/2 slice bacon for each scallop

In a small resealable sandwich bag, combine cilantro, garlic, lime juice, chili sauce, hot sauce and oil. Seal bag and massage to distribute ingredients. Seal both and refrigerate at least 1/2 hour or up to 6 hours.

Lightly oil grill grates. Preheat grill to 400-425F. Wrap each of the scallops with a strip of bacon. Skewer the scallops. Grill for about 4 minutes each side, or till scallops are done, basting with remaining marinade throughout cooking process.

BLT Wraps

1 cup light mayonnaise
1/2 cup dried tomatoes in oil, drained well & chopped
Eight (10-inch) flour tortillas (ok to use fat free or low carb)
1 large head iceberg lettuce, chopped
16 bacon slices, cooked & crumbled
salt and pepper, to taste

Combine mayonnaise & tomatoes in a small bowl. Spread evenly over 1 side of each tortilla, leaving a 1/2-inch border.

Sprinkle lettuce & bacon evenly over tortillas; sprinkle with salt & pepper.

Roll up tortillas tightly; cut in half diagonally, and secure each half with a pick.
