Classic Waffles

Do you ever just want to have a “me” day and even though there are other people in your house you plan something that you want to make for yourself and plan what your going to watch on tv and just have  a relaxing “me” night. Well thats what I had done, and I should have known better. All I wanted to do was watch survivor and eat waffles.. so I had made the batter the night before and all I had to do when I got home was cook them. Well dan insisted that he make supper last night.. so he threw in some breakfast sausage and warmed up the waffle maker.. and poured in way to much batter and locked the waffle maker shut, then kept opening it every 5 seconds to make sure it was working.. well all we got was a sticky mess.. when I got home I tried to tell him what he was doing wrong but he ended up getting all defensive and WHAM a fight broke out between us and I ended up crying in bed most of the night.. All I wanted was a perfect waffle supper and Survivor had started.  We ended up aplogizing and cleaning up the huge mess together.. hopefully my waffle maker is still workable dan submerjed it in water.. what else could possibly go wrong in one night? Well at least Dan is gone tonight.. boys night out.. I think I’m going to make bread tonight, that way I don’t have to worry about it rising during the day. If I start it at 9, punch it down at midnight, bake it at 5.. then go back to sleep for a couple hours that should be ok right? I just dont’ want to tire myself out if we are having mel’s suprise birthday tomorrow at the rink, but I can have plenty of time to sleep and stuff.. I just have to stay awake long enough for it to bake at 5.. which is only an hour or so.. I should hopefully be able to fall back asleep on the couch..

Classic Waffles

2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 1/2 cups warm milk
1/3 cup butter, melted
1 teaspoon vanilla extract

In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.

In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.

Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

yay for bread!

It was a snow day today and I couldn’t think of anything better to do than to make bread and cookies. I finally mastered the bread I think.. two of the loaves turned out and one I had done a braid ontop that kinda fell.. but other than that it worked really good.

Red River Bread
 1/2 cup Red River Cereal
1 1/2 cups water
1 3/4 cups lukewarm water
3 tbsp sugar
1/2 tbsp salt
1/4 cup canola oil
6 1/2 cups flour (approx.)
1 tbsp traditional yeast (equals one package)
1/4 cup lukewarm water
1 tsp sugar

Add yeast to 1/4 cup water and 1 tsp sugar.

Boil cereal in 1 1/2 cups water until cooked. Set aside and let cool. In a small mixing bowl, combine water, sugar, salt, oil and cooked cereal, add in yeast once proofed. In a large mixing bowl add 3 cups of flour and make a well in the middle. Add in the wet ingredients and slowly mix in the flour. Add the rest of the flour gradually until dough isn’t too sticky to handle. Turn out onto a floured surface, kneeding the rest of the flour in by hand. It may take a little more or less. Knead until the dough feels soft, but not sticky and bounces back when pressed, about 8 to 10 minutes. Shape dough into a ball, place in a well greased bowl, turning once to grease surface. Let rise 2 hours. Punch down dough and let rise for another hour. Divide into 3 equal portions and place in greased bread pans. Cover with cloth and let rise again until bread has risen 1 inch above the pans, about 4 hours.  Remove cloth and bake loaves at 350F for 30 to 40 mins until browned.

a trip for two?

So yesterday in the grocery store we ran into Trev and Mel. They informed us they are leaving to Mexico in a couple days. Its not fair, everyone else is getting to go places and do things, and I get stuck at home with the hockey billet that I don’t want. I mean even Dan gets to go places with his work. He is gone at least two times a month for 4 days at a time going somewhere. We went to Trev and Mel’s last night and thats all they talked about and I barely got one word in! It frustrates me so bad! But whatever, still had fun over there we played cards all night after the football game.

And before that I made my bread! And yes it turned out! I think my problem was my oven was too hot last time when I let it rise in there. And I didn’t let it rise long enough. Except when we got home from groceries one of the loaves was pouring over the edges and I went to kinda tuck them in a bit so I could bake them and it fell… so I baked the other loaf and let that one rise for an hour. And it still fell in the middle! Oh well, at least I have one good loaf. Thats better than last week when neither of them worked out! haha.. I’m so pumped that they worked out though.
