Do you ever just want to have a “me” day and even though there are other people in your house you plan something that you want to make for yourself and plan what your going to watch on tv and just have a relaxing “me” night. Well thats what I had done, and I should have known better. All I wanted to do was watch survivor and eat waffles.. so I had made the batter the night before and all I had to do when I got home was cook them. Well dan insisted that he make supper last night.. so he threw in some breakfast sausage and warmed up the waffle maker.. and poured in way to much batter and locked the waffle maker shut, then kept opening it every 5 seconds to make sure it was working.. well all we got was a sticky mess.. when I got home I tried to tell him what he was doing wrong but he ended up getting all defensive and WHAM a fight broke out between us and I ended up crying in bed most of the night.. All I wanted was a perfect waffle supper and Survivor had started. We ended up aplogizing and cleaning up the huge mess together.. hopefully my waffle maker is still workable dan submerjed it in water.. what else could possibly go wrong in one night? Well at least Dan is gone tonight.. boys night out.. I think I’m going to make bread tonight, that way I don’t have to worry about it rising during the day. If I start it at 9, punch it down at midnight, bake it at 5.. then go back to sleep for a couple hours that should be ok right? I just dont’ want to tire myself out if we are having mel’s suprise birthday tomorrow at the rink, but I can have plenty of time to sleep and stuff.. I just have to stay awake long enough for it to bake at 5.. which is only an hour or so.. I should hopefully be able to fall back asleep on the couch..
Classic Waffles
2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 1/2 cups warm milk
1/3 cup butter, melted
1 teaspoon vanilla extract
In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.
