Creamy Lemon Chicken Soup

I woke up this morning to the outside door banging up against the house. Its storming, and cold, and snowing.

I’m so glad I have some of this soup frozen for my lunches!

Creamy Lemon Chicken Soup
5 cups chicken broth
5 cups water
5 tsp chicken bouillen powder
3 medium carrots, chopped
1 large onion, chopped
4 cups cubed cooked chicken
1 cup uncooked long grain rice
3 eggs
1/3 cup lemon juice
1 1/2 tsp oregano

Combine first 5 ingredients and boil. Add chickena nd rice. Reduce heat, cover and simmer for 15 minutes. Whisk together eggs and lemon juice. Add slowly to soup. Seasonw ith oregano and pepper. Enjoy!

I didn’t put the eggs in the soup because I was freezing it, but it ended up being super thick anyway. So I’m not too worried. My boyfriends mom said to leave out some of the lemon but I didn’t think it was too bad.. I mean thats the way lemon soup is supposed to be..
