Saturday night we had the worst sleep ever. We think there is birds in our attic and they were banging around up there. Everytime they did that Kato got up and barked like crazy. And we had to be up early to go to Dan’s parents for breakfast. So.. after that we put in a movie and just relaxed all afternoon.
I really needed to make muffins and I found a quick and easy recipe in my new cookbook. I’m beginning to really love this new cookbook… These muffins are 129 calories each.
Fruit Filled Muffins
nonstick cooking spray
1 1/2 cups flour
1/3 cup sugar
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp baking soda
1/8 tsp salt
2/3 cup sour milk (put 2 tsp lemon juice in 2/3 cup milk. Stir and let sit for 5 mins before using)
3 tbsp cooking oil
1/4 cup of your favorite fruit spread
Coat twelve muffin cups with nonstick cooking spray or line with paper bake cups, set aside. In a medium bowl stir together flour, sugar, baking powder, cinnamon, baking soda, and salt. Make a well in the center of the flour mixture and set aside.
In a small bowl stir together sour milk, egg, and oil. Add mixture all at once to the flour mixture. Stir just until moistened (batter should be lumpy).
Spoon batter into prepared muffin cups, filling each about 1/4 full. Place 1 tsp of the fruit spread in the center of each. Add remaining batter.
Bake in a 400F oven for 18 minutes or until golden. Cool in muffin cups on a wire rack for 5 minutes and remove. Best served warm.
I found the batter really hard to work with. It was sticky, but the rose really good and turned out excellent! Even Dan likes them! YAY!
