Dan’s gone to coach in his hockey tournament this weekend. We cleaned up last night after supper so I made bread this morning and some Italian Wedding Soup. Its just so relaxing to have a day to yourself and not worry about what time your eating and have to have supper ready at or lunch or anything done for that matter…
Dan is also gone all next week so I can cook “real food” again.. food that has vegetables in it! YUM! I can honestly say that I’m getting over his being gone all the time and I enjoy the nights to myself because Ryley has hockey practice every night. I can play my wii fit and just relax and watch what I want to watch. We rented movies last night and I started to watch Cloudy with a Chance of Meatballs. I didn’t really care for it honestly… I think Up has been my favorite cartoon movie recently. I really enjoyed that one and cried a couple times. I think I might have to put a movie in later and relax… sounds like a good time..
Anyway before I get to relaxed here is my recipe for today:
Italian Wedding Soup
2 tbsp olive oil
2 carrots, peeled and chopped
2 ribs celery
1 medium onion
2 bay leaves
salt and pepper to taste
1 lb ground beef
1 lb ground pork
1 egg beaten
2 cloves garlic
1/2 cup grated parmesan cheese
1/2 cup plain bread crumbs finely ground
1/2 tsp nutmeg
6 cups chicken stock
2 cups water
1 1/2 cups dried pasta (I used about 1 cup cooked left over rice instead)
1 lb triple washed spinach coarsely chopped
In a deep pot over medium heat, add oil, carrots, onion, celery and bay leaves. Season mixture with salt and pepper. Cover pot and cook vegetables for 5-6 minutes, stirring occasionally.
While vegetables cook, combine ground meats, egg, garlic, grated cheese, breadcrumbs, salt, pepper and nutmeg.
Add broth and water to the pot of vegetables . Increase heat to high and bring soup to a boil. Reduce heat. Start to roll tiny meatballs and drop into soup. Add pasta and gently stir. Cover and simmer for 10 minutes. When pasta is tender add spinach in batches.
The soup is ready when the spinach is wilted. Adjust seasoning to taste.
Its so simple I’m not sure why I haven’t made it more often.. the only part that is tedious is the meatball making.. i’m thinking you could make a huge batch and freeze them maybe? It would make it easier..
